Spring is definitely in the air, and with this beautiful season comes weather for the perfect picnic.  Head to your local park on the weekend and you are sure to see every picnic table taken, lined with dish after dish of food and treats for families and friends.  With these three delicious picnic ideas for spring, you canjoin in the festivities and savor this gorgeous season.

Picnic Food Idea #1: Spring Salad

Having a salad is a light and refreshing way to enjoy a picnic in the weather.  There’s something about eating a salad outdoors that seems to connect you to nature in a way – and it’s healthy too!

To prepare this salad, you will need:

-          Assorted greens (Watercress, arugula, baby spinach, etc. – not iceberg lettuce)

-          Cherry tomatoes

-          Black olives

-          Shredded mozzarella cheese

-          ½ cup of halved roasted walnuts

-          1 teaspoon of lemon juice

-          2 teaspoons of olive oil

-          1 teaspoon of orange juice

Simply toss the ingredients together for your salad, and it is ready to eat.  You can use salad dressing with this salad if you wish; I recommend a light Italian or balsamic vinaigrette.

Picnic Food Idea #2: Egg Salad Sandwiches

Egg salad sandwiches are always delicious ideas for a light spring picnic.  Here is what you’ll need:

-          8 eggs, large, boiled

-          2 tablespoons of ricotta cheese

-          2 ½ teaspoons of honey mustard

-          3 teaspoons of plain yogurt

-          1 ½ cup of watercress (without stems)

-          Salt and pepper

-          1 teaspoon of fresh chives, chopped

-          1 teaspoon of olive oil

Take your hard-boiled eggs, peel and half them, and then take out the yolks. Crush up two of the yolks.  Chop the egg whites and include them with the crushed yolks in bowl. Combine the cheese, yogurt, chives, mustard, and salt (a dash) in a bowl.  Then, add the egg into this mixture. Mix in olive oil. Spread on watercress and bread.

Picnic Food Idea #3: Cantaloupe Boats

Finally, this fruity dish will add a refreshing dash of fruity flavor to your meal. Plus, it’s nice and easy to make – so no worries about complicated instructions. You will need:

-          Quarter slices of cantaloupe

-          Cottage cheese/yogurt

-          Raisins

-          Strawberry slices

To make, take a cantaloupe and half it, then quarter it.  Hollow out the seeds.  Place the cottage cheese or yogurt into the hole and top first with strawberry slices.  Then, add raisins to the top.  You can eat this delicious snack with just a spoon without having to break out plates or fire up the grill.  It also tastes good with honeydew melon if you prefer that fruit.
