I have this recipe on my computer ready to be shared with you for a while now. Just thought that it is the right time to publish it for you guys. Many have had problems on cooking a moist chicken breast as they might over cook it too much and they dry it out.

Well, I have this great tip that can help you achieve a moist chicken breast every time. It is all about the touch… if it springs back the chicken breast is ready and if it is still soft when touching it is still raw. Once you practice this tip several times you will get used to cook a moist chicken breast.

In today’s recipe I truly embraced the Mediterranean produce for this Chicken Breast stuffed with Tomatoes and Parmesan cheese recipe. Using one of the nicest herbs in town… Oregano I think that’s what made this gorgeous piece of white meat screaming EAT ME! :)

Chicken Breast stuffed with Tomatoes and Parmesan cheeseThe thing is that I did this when literally I had no time to cook a polished meal and so this is quite a fast meal to prepare and to cook. The Chicken Breast stuffed with Tomatoes and Parmesan cheese represents a kind of Chicken Parmesan but in a slightly different way. Less cheese more aroma to the dish and with a nice glass of red wine reduced to obtain a nice sauce it is just the icing on the cake.

With just 3-4 ingredients it makes this Chicken Breast stuffed with Tomatoes and Parmesan cheese recipe not just an easy one to make but more of a appetizing one as I believe that the simplicity of using few ingredients make a better dish and certainly reduces work time for does who are always on the run in their kitchen.

Chicken Breast stuffed with Tomatoes and Parmesan cheese

Ingredients

  • 2 (8oz/225g) each chicken breast
  • 1 lemon juice
  • 2 tomatoes fresh
  • 3 tbsp parmesan cheese, grated
  • 150ml / 2/3cup  red wine
  • 2 tsp oregano dried
  • 3tbsp extra virgin olive oil
  • salt
  • pepper

Method for Chicken Breast stuffed with Tomatoes and Parmesan cheese

-  On a raw meat chopping board, start off by making an insition or a pocket in your chicken breasts with a sharp filleting knife.

- Then place the chicken breasts pieces in a small bowl and squeeze in the lemon juice and leave to marinade for few minutes while you are preparing the other ingredients for the stuffing.

- On a clean chopping board slice up the tomatoes into rounds and set aside.

- If you are using fresh oregano chop it out finely with a chef’s knife.

- Take out the chicken breast and place them once again on the raw meat chopping board.

- Season them with salt and pepper and add the oregano inside the pocket and on the outside too.

- Fill in the chicken pockets with the sliced tomatoes and grated parmesan cheese. Then close the pockets (you can use also toothpicks if you want). But the cheese when it melts it closes up the chicken breast pockets.

- In a non stick pan add the extra virgin olive oil and carefully seal the chicken breast pockets on both sides (3 mins on each side) turning them with the tongs. They must have a nice golden brown color.

- Add the red wine to the pan and cover the non stick pan with a lid or a piece of tin foil. Must be covered well so the chicken breasts will be cooked steamed in its own juices.

- Check every 10 mins and if you see that the liquid has been evaporated add some water to help cooking the process of the chicken.

- After 25 mins use the tip I shared and talked about above in the post to check the chickens.

- Before serving leave them to set for 5 mins.

- I served this Chicken Breast stuffed with Tomatoes and Parmesan cheese with boiled carrots mixed with white beans and onion relish.

    Tried this recipe. Used sun-dried tomotoes instead of fresh ones and omitted the parmesan cheese. Very interesting site, prosit !! Recipes all seem simple and nutritious.
