<p>This is the cherry on the cake, as it is when the real money strike in if you do it right, making it different &amp; innovative and also if you market your product in the right way. After a few years online I started with a couple of e-books which I have created and are still selling out. I am not saying this is easy to do, but if I was able to do it so you can. I was always interest in designing and doing logos since I was 15 but I never went and studied design but I just wanted to raise the bar and re-start doing and applying what I have learned and what I was learning. <p>It&#8217;s really cold outside and I&#8217;ve got my hands all freezed up which I hate. I am more of a summer lover and it is not that normal that in Malta we have cold winters and really windy days. But this is what we are getting <img src='http://pimpthatfood.com/wp-includes/images/smilies/icon_sad.gif' alt=':(' class='wp-smiley' /> </p>
<p>Well, for this reason I had to create a nice hot soup. It is named <em>&#8216;the poor soup&#8217;</em> as it is one of the cheapest recipes with the cheapest ingredients you&#8217;ll find at your market; potatoes and onions. The <u>Potato and Onion Soup</u> idea came up while my dad bought these lovely white onions from the market and as we had already some potatoes in the veggie rack, I combined these ingredients to create a delicious Potato and Onion Soup recipe for cold winters. Being it cheap, this recipe will save you loads of money this winter.</p>
<p>Now, I know you can use leeks in place of onions in this recipe but the taste will be different as leeks are more sweet in taste and cost more. I am off to have a cup a soup of this Potato and Onion Soup as I am just craving for it. Enjoy it people!</p>
<p>Here&#8217;s the recipe&#8230;</p>
<h2>Potato and Onion Soup</h2>
<h3>Ingredients</h3>
<ul>
<li><strong>3-4 medium sized potatoes, peeled</strong></li>
<li><strong>3 medium sized white onions, roughly chopped</strong></li>
<li><strong>600ml/2 cups 3/4 vegetable stock</strong></li>
<li><strong>1 small carrot, roughly chopped</strong></li>
<li><strong>150ml milk</strong></li>
<li><strong>pinch of nutmeg</strong></li>
<li><strong>1 sprig of rosemary</strong></li>
<li><strong>3 tbsp extra virgin olive oil</strong></li>
<li><strong>salt </strong></li>
<li><strong>pepper</strong></li>
</ul>

<h3>Method for the Potato and Onion Soup</h3>
<p>- In a deep pot heat up the extra virgin olive oil and fry the white onions and the carrots for 3 mins.</p>
<p>- Add the roughly chopped peeled potatoes to the pot and mix with a wooden spoon.</p>
<p>- Then add the nutmeg, rosemary and seasoning.</p>
<p>- Add the vegetable stock and leave to boil and then simmer for 15 mins untill the potatoes are thoroughly cooked.</p>
<p>- Finally add the milk and continue cooking for 5 mins.</p>
<p>- Blend the Potato and Onion Soup using a hand blender or a food processor</p>
<p>- Then pass through a fine strainer and serve hot with some chopped rosemary on top.</p>

<p>Normally one can opt to use <a href="http://pimpthatfood.com/lampuki-pie">short-crust pastry</a> for a pie, but what I did is using the Filo Pastry layers for this <u>Broccoli and Brie Filo Pastry Pie</u> that came out crispy on the outside and fantastic texture inside. The thing is that as I had a lot of broccoli (which I adore), I wanted to base my weekly home-menu on this fantastic vegetable.</p>
<p>For the Broccoli and Brie Filo Pastry Pie I decided to use Brie the french cheese although italian cheese Gorgonzola Dolce would have been also suitable for this recipe for its stronger taste than the Brie. It goes superbly well with Broccoli!</p>
<p>The only draw back is that you must use a lot of melted butter to get this Filo Pastry nice and crispy <img src='http://pimpthatfood.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>Here&#8217;s the Recipe for you&#8230;</p>
<h2>Broccoli and Brie Filo Pastry Pie</h2>
<h3>Ingredients</h3>
<ul>
<li><strong>500g filo pastry </strong></li>
<li><strong>400g broccoli, cut into small pieces (boiled)</strong></li>
<li><strong>200ml fresh cream</strong></li>
<li><strong>3 medium-sized eggs, beaten</strong></li>
<li><strong>1cup/250ml milk</strong></li>
<li><strong>180g brie cheese, slices</strong></li>
<li><strong>pinch nutmeg</strong></li>
<li><strong>salt &amp; pepper</strong></li>
<li><strong>250g salted butter, melted</strong></li>
<li><strong>cumin seeds for decoration on top</strong></li>

<h3>Method for Broccoli and Brie Filo Pastry Pie</h3>
<p>- Start off by boiling the small florets of broccoli in salted boiling water for 3-5 mins.</p>
<p>- Then drain from access water using a <a href="http://www.amazon.com/gp/product/B000O19L14/ref=as_li_ss_tl?ie=UTF8&amp;tag=pithfo-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B000O19L14">colander</a> and set aside.</p>
<p>- Beat the eggs and add them to the fresh cream and mix well together.</p>
<p>- Mix together in a large bowl the broccoli, milk, cream mix, nutmeg and season with salt and pepper.</p>
<p>- Melt the butter and roll the filo pastry sheets (you don&#8217;t need to cut them). <strong><em>(Important to leave covered at all times) </em></strong></p>
<p>- Use a <a href="http://www.amazon.com/gp/product/B002U9JSSY/ref=as_li_ss_tl?ie=UTF8&amp;tag=pithfo-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B002U9JSSY">12 inch tart tin</a> and brush the tin with the melted butter then add your first layer of filo pastry sheet.</p>
<p>- Brush the filo pastry sheet with butter and place another sheet on top across the first layer (so you cover all the tart tin)</p>
<p>- Add another 2 filo pastry sheets with the same method always buttered.</p>
<p>- The next step is to add half of the broccoli mixture in the tart tin and lay your slices of Brie cheese.</p>
<p>- Then pour over the other half of the broccoli mixture and smooth the top.</p>
<p>- Add 4 layers of buttered filo pastry on top using the same procedure and finally add the cumin seeds.</p>
<p>- Bake the Broccoli and Brie Filo Pastry Pie in a hot oven for 30-35 mins.</p>

<p>Actually it has been a long journey as it was a long time goal I have just achieved as I made this goal when I was around 14 years of age. That time was when I wanted to be more hands on in the kitchen. The thing is that I remember writing my Goal that I want to have a <a href="https://www.lulu.com/commerce/index.php?fBuyContent=11085356">published recipe book</a> before I am 30 years old on a piece of paper that I carried with me using it as a book marker <img src='http://pimpthatfood.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>
<p><a href="http://pimpthatfood.com/wp-content/uploads/2011/12/TastyBBQ1.jpg"><img class="alignright size-medium wp-image-3475" title="TastyBBQ1" src="http://pimpthatfood.com/wp-content/uploads/2011/12/TastyBBQ1-300x225.jpg" alt="Tasty BBQ's Cook book" width="300" height="225" /></a>It is so thrilling as after all this hard work of sleepless nights during this Summer 2011, when people went on sunbathing or partying I was writing the content, scruffing the book design or creating the <a href="http://pimpthatfood.com/books">book</a> logo. I kept going and going till I finally realized it and I can tell you that it feels like winning a Grammy award. My family (to whom I dedicated this book) were just a huge moral support so I could have finalized this product this year. Special thanks goes to my brother Jason for his proof reading.</p>
<p>The exciting part was when I heard the bell ringing and it was the postman, that handed me the first copy of my book after days waiting for this moment that finally arrived. I&#8217;ve got emotional and all fired up when I was holding the book in my hands thanking God for that moment, that I have dreamed for&#8230; it was special.</p>
