Lampuki Fillets with Mashed Potatoes are going wild!

One of the most famous fish in the Mediterranean and Malta especially in this period is certainly the Lampuki (Common Dolphinfish). These Lampuki are traditionally bought for the famous Lampuki Pies, Shallow fried Floured Lampuki pieces and Lampuki with tomato sauce which are a really delicatessen in taste for my homeland.

The thing is that with this white fish you can do anything from fish cakes to soups to Pasta sauces. What I decided to do with this fish today is a different twist. I stuffed the Lampuki Fillets with Mashed Potatoes that are cooked in such a speedy way for a delicious an unique healthy main course. A positive thing is that Lampuki haven’t got any scales so it won’t take you much time when cleaning the fish from gills and guts.

I still remember at my grandmother’s town in Tarxien, the Fish vendor honking his horn of his small van shouting ‘ Hawn tal-Lampuki’ which means (The lampuki vendor is here) and you’ll be amazed how people gather in the ‘Pjazza’ (square) to buy this cheap but very tasty fish. With 2.50/3 euros per kilo, Lampuki is a very versatile fish and one of the cheapest fish on the market especially in the months of October/November. The idea behind the recipe of Lampuki Fillets with Mashed Potatoes came as I wanted to incorporate the contorni (the side dish) as a stuffing between the fish fillets.

The Lampuki Fillets with Mashed Potatoes recipe might seem different from what you have ever cooked but it is quite a easy and quick recipe to prepare you will simply enjoy it. Nowadays you can buy Lampuki already filleted and cleaned which surely will save you more time in the preparation of this dish. The mashed potatoes are done with natural yoghurt and chopped fresh chives.

Here’s the recipe for you…

Lampuki Fillets with Mashed Potatoes

Ingredients

200g each approx. of lampuki fillets (8 fillets)
4 medium size potatoes, peeled
2 tbsp chopped fresh chives,
2 egg yolks
100g unsalted butter
150ml natural yoghurt
pinch of dried thyme
some extra virgin olive oil
salt
pepper

Method for Lampuki Fillets with Mashed Potatoes

- Clean the lampuki from the gills and guts and fillet the fish.

- Keep the bones and heads for a nice fish stock or fish soup or you can freeze them in plastic bags.

- After you have the Lampuki fillets ready make sure you remove the middle bones and other small bones.

- In a deep pot containing water and rock salt, boil the potatoes to prepare them for the mash.

- When the potatoes are nice an cooked thoroughly mash them up with a masher and add the butter, yoghurt, egg yolks and the chopped chives.

- Mix well to incorporate the ingredients and you should have a thick consistency of mashed potatoes.

- Add some salt and pepper and taste.

- In the meantime prepare an oven dish and drizzle some olive oil. Add the 4 lampuki fillets skin side down and season with salt, pepper and thyme.

- Spread the mashed potatoes mixture evenly on the lampuki fillets and then add the other fillets on top of the mashed potatoes.

- Press a bit the lampuki sandwich and score with a sharp knife.

- Drizzle a bit of extra virgin olive oil and some thyme and bake for 14-16 mins in a medium hot oven.

- You can serve this Lampuki Fillets with Mashed Potatoes with steamed vegetables (courgettes, carrots or cauliflower)
