Potato and Sausage Cake… to served with your lovely festive dinner!
Got a confession to make, I couldn’t resist not to do this before hand for my brother’s birthday three course dinner that I set up at my house. What I did is as a starter is my now famous Spaghetti with Coffee sauce (this recipe featured in Food Buzz Top 9 Recipes) and then as a main course I served this delicious Potato and Sausage Cake with a nice Pan-fried Veal and mixed vegetables. 
I have always wanted to create something different with mashed potatoes to serve, and I thought of how I can invent this Potato and Sausage Cake recipe for simple cut it into wedges exactly like a normal cake… It worked
. The thing sliced potatoes on the top covers the mash like a crust which is the best part (in my honest opinion). I used Maltese sausage with the mash but you can use chorizo or other kind of sausages that have a great stuffing. Well… it time for you to try this one out. I know it tastes good but… you’ll never know until you’ve tried it

Potato and Sausage Cake
Ingredients
- 3-4 large potatoes, peeled (save some for the top, thin sliced)
- 1 (150g) maltese sausage (skin removed, only meat)
- 2-3 eggs, beaten
- 100g parmessan cheese (optional)
- 2 tbsp parsley, finely chopped
- pinch nutmeg
- pinch thyme
- salt & pepper
