When it comes to fish… the white fish type which we have a lot in the Mediterranean sea I get excited as it is so nutritious and mouth-watering when it is cooked to perfection. Some over-cooked fish can be a killer as the fish dries up and will be tasteless and gummy.

With plenty of sea breams around even though thanks to the fish farms, this fish is a very common one. For the Oven Baked Sea Bream with Herb Butter I wanted to create a dish that is so simple to make that if you have kids they will get this done by themselves next time. The recipe is delicate yet uncomplicated with only few ingredients that won’t kill the fish taste or overpower it at all.

In the Oven Baked Sea Bream with Herb Butter recipe I use some fragrant herbs that marriages well with this white fish. The Herb Butter is very useful not just for this recipe as you can roll it on in a greaseproof paper and freeze it. You can use it with Pasta, Chicken & Pork dishes or to mount a specific sauce for some shininess.

Oven Baked Sea Bream with Herb Butter

Ingredients

  • 4 medium sized sea bream
  • 250g salted butter
  • 6 basil leafs, chopped
  • 2 tbsp parsley, finely chopped
  • 1 tbsp thyme
  • 1 tsp grated ginger
  • few drops of lemon juice
  • 1 garlic clove, crushed
  • pinch salt
  • ground pepper

Method for Oven Baked Sea Bream with Herb Butter

- Start off by preparing the Herb Butter. Make sure that the butter is at room temperature (not too soft).

- In a bowl put the butter and all the herbs (basil, thyme, parsley), lemon juice, garlic clove and the grated ginger and mix well together with a wooden spoon or a spatula. You can use a food processor to do the Herb Butter by using the blade and blitzing for a minute or two. Season with salt and pepper.

- Take out your sea bream on a board and remove the guts and gills. Then scale the fish with a fish scaler (make sure you remove all the scales).

- Then with a sharp knife make three slanting cuts in the fish fillet about 1/2 inch from each other (to insert the Herb Butter).

- Transfer the sea bream on a tin foil sheet folded in two (more resistant) and season the fish with salt and pepper.

- Next, insert the Herb Butter in all the cuts you prepared earlier with a spatula.

- Seal well the tin foil pouch and place the fish in a hot oven for 12 minutes.

- The Oven Baked Sea Bream with Herb Butter can be served with boiled new potatoes and steamed vegetables.
